What is a "bouquet garni" and how to use it ?
A "bouquet garni" is the combination of several dried aromatic plants gathered into a small bundle by a food string. The best known contains some thyme branches and a bay leaf. But there are all kinds of them, always composed by a combination of aromatic plants.
The bouquet garni allows you to perfume your marinades and sauces, and is easily removed from the dish when all the flavors have permeated the preparation. It is generally dipped into the dish when starting cooking, so that its aromas are released into the preparation. Pot-au-feu, veal blanquette, coq au vin, beef bourguignon, chicken Basquaise, stews, soups or lentil sausages, use it in all your sauces !

In order to successfully manufacture our bouquets and guarantee you a finished product with exceptional organoleptic qualities, the aromatic plants and branches are processed within 48 hours after harvest.
Our bouquets are made manually and tied with food elastic. They are then dried in a box heated between 33 and 36°C, with a controlled hygrometry adjusted according to the batches. The objective is to preserve as much as possible the color of the plants and their level of essential oils.
